This chickpea vegan "tuna" salad is an easy, satisfying and delicious vegan alternative to the usual non-vegan sandwich fillers. Enjoyed by vegans and non-vegans, it is also much more affordable than (Tuna Sandwich Recipes)

Ingredients cans chickpeas, rinsed and drained (or 3 cups cooked chickpeas) 1 shredded carrot 2 stalks celery, finely dic.

Mash the chickpeas and add 1 shredded carrot, 2 stalks diced celery, small diced red onion, finely diced, tsp salt tsp ground black pepper. Then mix in with cup of vegan mayonaise.

chickpea salad - try using celery root instead of celery. (Shredded carrot and celery root with just a little mayo and lemon juice is simple and excellent also)

This chickpea vegan "tuna" salad is an easy, satisfying and delicious vegan alternative to the usual non-vegan sandwich fillers. Enjoyed by vegans and non-vegans, it is also much more affordable than tuna or chicken salad and it can be available for a weeks worth of lunches if prepared ahead. In our house, it never lasts that long!
