Ingredients:

360g softened cream cheese
70g confectioners' sugar
10g cornstarch
3 eggs
1 egg yolk
100g heavy cream

Steps:

Softened the cream cheese. Add in confectioners' sugar and beat until smooth. Add in cornstarch and beat until smooth. Gradually add in 3 eggs and 1 egg yolk, beat until well combined. Add in heavy cream and mix well.Preheat the oven to 428°F(220°C). Line The loaf pan with parchment paper, pour in the batter and send into the oven to bake for 28 minutes. Let the cheesecake cool down at room temperature. Set it in the fridge to cool overnight. Slice and serve.

INSTRUCTIONS

1 cup ginger, with skin, roughly chopped

¼ cup maple syrup
½ cup apple cider vinegar

Warming some feta until it begins to melt, drizzling it with a little chili crunch and then frying an egg directly on top to create a lacy, crispy, cheesy crust absolutely spoke to me.  Serving it on a charred tortilla that I simply warmed directly on the burner and then smashed some avocado on it, was just the icing on the cake.

-10-12 pieces of bacon 
-10 eggs
-1/2 tsp salt
-Cracked pepper
-1/2 tsp garlic powder
-1 tbsp Dijon mustard 
-1 large white onion, thinly sliced
-2 tbsp butter 
-5-6 mini croissants 
-3/4c shredded sharp white cheddar

Half a cup of cream cheese

METHOD:
Boil the pasta according to packet instructions. Halfway through, add the asparagus and peas.
Once the pasta is cooked, save a little pasta water and drain everything.
Add the pasta, asparagus and peas back to the saucepan and add the cream cheese, pesto and pasta water.
Mix thoroughly, season if you wish.
That’s it!

Serve!
You can swap the asparagus for green beans or sliced leeks if you prefer.
This is lovely with a little lemon juice and a few chilli flakes sprinkled over at the end 😋 (for the grown ups)

Fondant potatoes are a traditional French side dish where you cut russet potatoes into rounds or squares and then cook in butter, garlic, aromatics and chicken stock. It is a dish you won’t find too often these days, but is impressive and delicious to all guests you may be cooking for.

Ingredients:
* 4 russet potatoes, peeled and cut into 1 inch rounds
* 10 garlic cloves, smashed
* salt and pepper
* avocado oil
* 4 tbsp butter
* 2 sprigs rosemary
* 4 sprigs thyme
* 1/2 cup chicken stock

Instructions:

STEP 1.

6 lemons, halved long ways with pulp scooped out
16 ounces heavy cream (2 cups)
2/3 cup granulated sugar
1/2 teaspoon kosher salt
Zest from 2 lemons (about 1 tablespoon)
1/2 cup lemon juice (4 ounces)

To a saucepan, add heavy cream, sugar, salt and lemon zest. heat over medium-low heat until very hot to the touch, about 3 to 5 minutes. It shouldn’t be boiling but should be steaming.

Remove from the heat and pour in the lemon juice. Pour the lemon/cream mixture into the halved lemons. Carefully transfer them to a cutting board or baking sheet and place in them in the fridge to chill, at least 4 hours.
