Servings: 3 INGREDIENTS3 russet potatoes2 tablespoons olive oil2 teaspoons salt1 cup shredded cheddar cheese, plus more for topping½ cup scallions, chopped¾ cup bacon, chopped, divided½ cup sour cream, plus more for topping1 tablespoon butter¼ cup milk1 teaspoon pepperChives, to servePREPARATIONPreheat the oven to 350°F/180°C.On a baking sheet, oil the potatoes well and sprinkle with salt. Bake for one hour. If making more potatoes, an additional 15 minutes per potato is needed.
