Creamy Soft Polenta | The Gluten Free Vegan

I love polenta. I have another recipe for polenta that's set and then can be cut and fried up. You can check that recipe out here. I also love creamy polenta and a lot of recipes include dairy.

Pork San Choy Bau: 500g pork mince, 2 spring onions (long green & white ones), 1cm fresh ginger, 1 clove garlic, 1 small can of bamboo shoots, 2 small carrots, 1 stick celery, fresh coriander and mint, 1 tablespoon soy sauce (optional), 2 tablespoons cider vinegar, 1 tea spoon sugar, salt and white pepper. Serve on lettuce leaves: I blended all the vegies, then mixed everything together and marinated for a couple of hours and just fried in a fry pan.
