I love traditional, regional recipes and spotted this one in a Newfoundland magazine called Downhomer submitted by Lila Young. I have not made it but it sounds very interesting even with the high fat content. They are like a Newfoundland First Nations Bannock. The pork fat is referred to as scrunchins in the recipe but that is not in the computer vocabulary so I called it fatback pork

One day might not nearly be enough time to explore St. John’s, but I feel like I got a taste for this friendly and scenic part of Canada, especially after wandering around the historic Signal Hill area.
Went on a long weekend trip to St. John's Newfoundland with a friend. Once my travel companion finally hauled out of bed, we hiked around the base of Signal Hill. Battery Road splits into many dead-end roads and becomes a wonderfully colourful neighbourhood. It was a great walk.
