Heritage Marquis Wheat was at one point the most widely planted wheat in Canada. A strain of the variety has been re-established by an organic Saskatchewan farmer. A local Aylmer farmer is now milling the grains and the flour is available in his farm store. Makes absolutely incredible bread!

Relish Elgin is a print & online magazine promoting the people, places, businesses and events of Elgin County and St. Thomas, Ontario, Canada with a focus on local food, agriculture, music, arts, recreation and leisure.

The idea of using more whole grains & flours in bread, along with prefermenting them using sourdough starters and poolishes, is to make more nutritious, easier to digest - and most importantly - deeper flavoured breads & pastries. Much of these grains and flours, mostly organic, can be found on an Amish farm just outside of Aylmer. How lucky are we?!?
