Roasted cauliflower as a base for pizza. I made regular pizza for family at the same time. Takes a lot longer to cook the wheel of cauliflower through at the centre- so roast first. So worth the effort. YUM!
"Buddha" Taco's. Used taco seasoning on the veg, plus fresh guacamole and salsa. YUM! And easy to provide regular tacos for family at the same time.

Week 2 or 3- this veggie wrap has minimal grain (a rice wrap) and is stuffed with veg. Purchased form a sushi venue at the Calgary farmers market. Delicious!

Roasted butternut squash, coconut milk and organic tomato sauce with just the right spices makes a delicious bowl of curried soup. Yum!
Kale Pesto: Kale, basil, lemon juice, walnuts, cashews, salt, pepper and lemon juice. (garlic optional).
