This is a very different Black Bean Soup. Made with pumpkin puree and coconut milk. I added sautéed onion, carrot, zucchini, and sausage to add some freshness. My son at this up, even the carrots and zucchini!
One Pot Caribbean Jerk Chicken & Rice – A flavor explosion in a pot! Jerk Chicken thighs baked to Crispy perfection on a bed of fragrant rice and beans. Cut rice and broth in half. Great flavors, but too much rice to chicken. Will definitely make again.
