Crab Stuffed Flounder
Stuffed Flounder: 4tbsp butter, 1tbsp minced onion, 1tbsp dried parsley, 3oz crabmeat, 1/4 + 1/8 c dry bread crumbs, 1tbsp lemon juice, 4 flounder fillets, and ¼ tsp paprika. Oven = 400°F. Coat 9"x13" baking dish w/ cooking spray. Melt 3 tbsp butter in pan at med-high. Add onion & parsley; sauté for 1 min. Stir in crab, crumbs & lemon juice. Spoon over fillets then roll up each; place seam side down in dish. Melt 1 tbsp butter; drizzle over fillets; sprinkle with paprika. Bake for 20-25 min.
