This recipe gets its inspiration from Mexican street corn. Piping hot corn on the cob is smeared with mayonnaise and dredged with Queso or Cotija cheese, fresh cilantro, chile powder, lime and plenty of salt and pepper. Skip the mayo maybe.
Roasted Corn Salsa - this looks delish but I wouldn't waterbath as suggested - it needs to be pressure canned because of the quantity of low acid corn. I might also reduce the quantity and just eat it that week.
