If it feels like déjà vu all over again, don’t be worried. Hoppin' John is a New Year's Day tradition. (Newscom photo)This time last year we were also preparing for an Alabama college to play for the national collegiate football.
Tasty Frozen Collard Greens - I made these with a white onion and subbed chicken broth for the water (and added a bit more). I also simmered significantly longer than the recipe suggested. Not as good as fresh collards but good for a quick side!
Hoppin' John recipe: According to legend, a person must consume at least a spoonful of black-eyed peas on the first day of the year to ensure good luck for the rest of the year. *** TOTALLY did this on New Year's Day :D
My son Brian will eat these for a week. He absolutely loves them. Whatever beans you have throw in. I put different beans in each time depending on what is in the cupboard. Great for a potluck, camping or picnic.
