Eating healthy on a budget doesn't have to be difficult. Last night, while helping one of my kids rehearse lines for an upcoming theater production, I kept my hands busy preparing a number of 100 calorie snack packs out of various fresh healthy ingredient

Poor Man's Cake- from the depression & war. No eggs, milk or butter. Boil together for 5 min: 2 cups raisins & 2 cups water. Then add: 1 cup cold water, 1/2 cup shortening, 2 cups sugar, 1 t. salt, 1 t. nutmeg, 1 t. ground cloves, 1 t. ginger, 2 t. cinnamon. Now add 2 t. baking soda, 2 t. baking powder & 3 cups flour. Bake @ 350 for 1 hr in greased 13x9 pan. I usually frost it, but just powdered sugar on top also works.
