Chevy's Sweet Corn Tomalito! - Anyone who's been to Chevy's with me knows I love this stuff!!!

Sweet Corn Tomalito - cups fresh corn kernels cup milk - cup ( stick) butter cup prepared masa for tamales ( if not available use masa harina and adjust the milk as directed on the pkg) cup sugar cup cornmeal teaspoon baking powder teaspoon salt cup milk

Sweet corn tomalito--made in microwave (7min at 30%, 4min at 100%). This one is a keeper! (Jed calls it a texmex breakfast blondie)

Cornbread Pudding Made this today! Turned out phenomenal...  made a few tweaks though (added eggs and butter) and it tasted like the Corm Tomatillo from Chevy's

Cornbread Pudding: Modified to 350 degrees for 30 minutes 450 degrees for 15 minutes (check on it!

Sweet Corn Tamalito:  Put into blender pitcher 1 bag corn, 3/4 cup cornmeal, 3/4 cup masa harina, 1/2 cup sugar, 1/4 cup butter (or more,to make it taste like Chevy's), 2 t. baking powder, 1 t. salt, 2 tb. dry milk, and enough water to make a thick batter.  You will have to use the tamper if the corn is frozen.  Bake, covered, at 350 for an hour.  Serve with tomatillo sauce.
