Chile Rellenos Casserole - Made this and would not call it a chile relleno casserole since it doesn't taste like chile rellenos at all. It's more like a green chile casserole - kind of tex-mex, but not authentic mexican food.

It’s actually a healthier version of a traditional chile relleno, which is wonderful, but it’s definitely not light in authentic Mexican flavor. Poblanos are readily available at your local grocery store year-round, which makes this dish a wonderful dinner choice for any time of year and is also the perfect Lent meal.
Chile Rellanos, having grown up in a Hispanic house and eating this often just never learned how to make them, I am curious to try this recipe but my mom and family members always got the green Padilla chiles so that is what I will use
