Fresh Summer Salsa: 3 roma tomatoes cup chopped onion 2 garlic cloves 2 tbsp chopped fresh cilantro jalapeño tsp salt In no particular order chop everything up, add the salt and give it a good stir. You can also try adding black beans or avocado
Mango Red Pepper Salsa: Forget that jarred salsa laden with extra salt and preservatives. Freshen things up with a bowl of mango red pepper salsa; it& sweet and tangy with the right hint of heat.
Fresh broad bean and mint dip
1½kg broad beans; 1 spring onion, trimmed and finely chopped; 2 tbsp crème fraîche; 15g fresh mint leaves. Method 1. Pod the beans. Bring a small pan of water to the boil and carefully tip the beans into the pan. Boil for 3 minutes, then drain and plunge straight into a bowl of cold water. They should pop out of their skins when you peel them. 2. Put the beans into a blender with the spring onion, crème fraîche and mint, and purée until smooth. Serve with cruditès of your choice.
