Glaze is defined as a thin, liquid, sweet coating that adds both shine and color to pastries. When brushed on fresh fruit, a glaze serves as a protective coating to prevent the fruit from drying out. On a baked crust, it prevents a soggy pastry crust once the filling has been added.     A pastry brush is normally used to lightly coat the fruit with the glaze.

Glazed Fruit Tart recipe:      GLAZE & FRUIT FILLING. Make the apricot glaze by heating apricot jam and water together in a small saucepan. Stir well to melt. Strain liquid and discard any pulp. Place liquid back in saucepan and heat gently for 5 minutes to thicken. Allow to cool slightly.  Dip pastry brush into apricot glaze and lightly brush the surface of the fruit to give an attractive shine.
