Best dip you will ever have!!! It's 1lb. of ground sausage, one package of cream cheese and one can of Rotel. Brown the sausage, drain and then put in a crock pot with the cream cheese and Rotel. Heat for 45 minutes on high or 90 minutes on low. Serve with tortilla chips. BEST THING EVER.
This is like a queso, but we have always called it Rotel Dip, so that is the name I am using here. :-) This recipe uses the mild Rotel diced tomatoes but you can always kick it up a notch with the medium or hot versions.
