Zucchini carrot apple muffins: i baked 16 minutes. I added cup greek yogurt; splash of almond milk. No ginger, 1 tsp cinnamon. Made 18 muffins. Used only cup minced carrots, more zucchini, just measure 2 cups total of zucchini carrots apple.

Double chocolate banana bread~ Moist, chocolatey, and delicious! I added a bit of coffee extract to the batter to help emphasize the chocolate flavor, and sprinkled the top with a cinnamon. I halved the recipe to make just one loaf pan.
