The Marc: The kitchen, led by Chef Bryan Cruz, is young, very creative and full to overflowing with enthusiasm. Begin with a duck confit rillette on a bed of greens with a blueberry gastrique or a Gruyere pancake topped with sauteed escargot, aoili, bacon and radishes.
Catch & The Oyster Bar: This mainland restaurant has built a strong working relationship with the Vancouver Aquarium and actively participates in the Ocean Wise Program, ensuring that guests are provided with the most sustainable and ethically responsible seafood possible.
The Banffshire Club, Fairmont Banff Springs: Begin with wild foraged Greens, morels, a hens Egg with a golden canola & wild fennel vinaigrette. You can sample heritage Angus beef tartare with pepper cress and some smoked mustard. There are Desolation Sound spot prawns in season and line-caught halibut from Haida Gwaii.

FARM Restaurant: Owned by Calgary’s cheese maven, Janice Beaton, who also operates Janice Beaton Fine Cheese, one of the finest cheese shops anywhere in the nation, FARM is a casual, cozy place with a harvest table for gathering your friends or the bar where you get to watch the cooks work their magic.
Brava Bistro: The burrata salad is based on tender butter lettuce with nettle pistou. The soup (pictured) is spring onion with a Dungeness crab fritter and a swirl of anise-flavoured yogurt. Her lighter ‘n air gnocchi are based on sweet peas, dill, mint and Fairwinds Farm goats milk feta. There halibut from coastal B.C., Alberta lamb and really excellent Maple Hill Farm chicken with foraged mushrooms.
MARKET: “As long as it is sourced properly, cooked with purpose, balance, finesse, and respect, then it has my attention,” says Chef Dave. This seasons’ dinner menu boasts fan favourites including, Bison Tartar, Fois Gras Burger, and Alberta Elk Carpaccio.
