The Marc: The kitchen, led by Chef Bryan Cruz,  is young, very creative and full to overflowing with enthusiasm. Begin with a duck confit rillette on a bed of greens with a blueberry gastrique or a Gruyere pancake topped with sauteed escargot, aoili, bacon and radishes. Brava Bistro: The burrata salad is based on tender butter lettuce with nettle pistou. The soup (pictured) is spring onion with a Dungeness crab fritter and a swirl of anise-flavoured yogurt.  Her lighter ‘n air gnocchi are based on sweet peas, dill, mint and Fairwinds Farm goats milk feta.  There halibut from coastal B.C., Alberta lamb and really excellent Maple Hill Farm chicken with foraged mushrooms.
