He uses walleye, northern pike and rainbow trout from the lakes near Prince Albert and on his own acreage he grows bushels of fresh herbs and garnishes like pea sprouts.

Ayden Kitchen & Bar: Sure, there’s the requisite burger (daily ground beef served on a puffy golden bun with roasted garlic aioli) and even a huge juicy hot dog (after all it was named after a now-12 year old boy) but there’re also platters of house-made charcuterie and handmade pasta; duck confit and a totally spectacular lobster Caesar salad.
The Artful Dodger Café & Music Emporium: My friend C.J. Katz, herself a Prairie treasure and columnist for the Regina Leader Post, interviewed Carol and asked her about the name. “I chose the name the Artful Dodger because of the spirit of the character in Oliver Twist. He was an orphan placed in a difficult situation and chose to see himself as a survivor and not a victim. He had a strong sense of community and love of life. Some people say he was the original hipster.”
Hotel Saskatchewan: Chef Rebello’s heritage is a neat combination of Indian and Portuguese so his grasp of flavours is exquisite. He uses Saskatchewan mustard and grows his own herbs from coriander to basil that was given to him by Prince Charles’ butler. He makes tri-coloured beet terrine to be served topped with candied sunflower seeds. Lentils abound on his menus including a pilaf which is really a compendium of 12 Prairie grains.
