I bought some quinoa and made a warm bowl with veggies. Added some maple syrup to my dressing. It was delicious! And do not underestimate this tiny yellow pepper. Its an Hungarian wax pepper (hot!!). One of my favourite vegan pasta dish! Created by me. Gluten-free pasta from “gogoquinoa”, sun-dried tomatoes, tomato paste, vegetable stock, garlic, onions, saffron, vegan “chao” spicy cheese. Absolutely delicious!
I finally bought some squash :) this one was so sweet! Its an excellent source of beta-carotene, of iron, vitamin C, some B vitamins and fibers (cook and eat the skin as well for more fibers). I also baked the seeds to snack on later.

I blended a few leftovers together (some squash, black beans, eggplants, chilli, organic turmeric, vegetable stock, jalapeño pepper, coconut milk, nutritional yeast and Himalayan salt). It turned out to be the best squash-penne meal I’ve had (so far)! I also used @gogoquinoa gluten free penne’s (so tasty). Oh and I sprinkled some fresh basil on top.
