OK, wow—I just made what is now my new favourite muffin recipe EVER with ingredients that were sitting in my fridge and getting close to their expiration date: yogurt, years-old jam, soft strawberries, and half a lemon that had begun to dry out.
A few days ago, I was really craving a date square but didn't want to be stuck with leftovers all week. I tried to concoct a single portion in less than 15 minutes and it worked (aside from the fact that I burned my first batch of crumble).
After a vacation that was far from relaxing, getting back into a routine was what relaxed me the most—ironically—despite the major renovation work going on in my house/kitchen (which I will be very excited to show when it's all done!
