This is Casetile: it is a a cheese/Easter pie made in my parent's home town in Bagnoli del Trigno, Molise, Italy. It has a different texture, flavor and resonance than French quiche which is creamier. It is a lighter treat than the other Italian cheese pies that have ham or other meats and that sit like lead after eaten. Great with wine, salad and better cold. But watch out...because it is so tasty that you will eat half of it before you know it's gone.
