This curry is not only vegan and comforting, but it's student friendly! I used tons of frozen veggies and tofu as a protein, all of which are inexpensive and easy to find. Majority of the flavour comes from a store-bought Thai curry paste (I paid less than $5 and it'll last you months) as well as inexpensive ingredients like lime, ginger, and a tin of coconut milk. This is also great since it only takes 30 minutes to prepare.
I love making these Vietnamese summer rolls when I want something that’s not only easy and delicious, but also healthy and packed with veggies. These make a great snack or a light lunch whether you’re heading to school or the office.
You can find biscotti at almost any cafe and bake shop you go to, but many biscotti contain honey or milk in the recipe. So for today we made some small vegan adjustments to bring you these crunchy, nutty, and zesty biscotti!
Not only is eggnog great as a drink, but using it to soak day old bread for french toast has me thinking why isn't eggnog available all year round? I'm not sponsored by So Delicious, but their vegan eggnog is packed with spices that just get me pumped for the holiday season.
