There is never a time that waste is acceptable. This was free rhubarb. They were giving it away because it had been used as display. I went and picked it up with a friend. She qorks with new ethnic women to Canada. They had never seen rhubarb. I took my haul home washed, chopped and processed it. This is the last of my local Ontario organic garlic. I know this time comes around each year but sometimes I am sad like this year and other years like the last not so much. Last year as always the garlic starts to dry but I had plenty to turn into roasted garlic olive oil and this got me through until the new crop in June rolled around.
