Mini Ham and Egg Cups
These mini ham and egg cups are a cute and easy breakfast. They are great with bacon, red peppers, green chilis, and pepper jack cheese.
Don't know where I found this (maybe safeway recipes) - but it is our new favorite baked chicken - cut up some marinated artichoke hearts into chunks, throw in a heaping tbsp of mayo, and small handful of parm cheese and mix up. Scoop over chicken and bake covered (we do 425 till it looks done). Uncover and bake for a few more minutes so the mixture gets all brown on top.
