Corned Beef & White Rice, a Bahamian favourite we call "Fire Engine". Tinned corned beef is simmered with onions, tomato paste, black pepper, thyme and hot peppers. Do not add salt because the beef is already "corned", which means salted. Home recipes may also include bell peppers, celery, other herbs and lime juice to taste.
