I love carrot cake, but I hate the idea of making a recipe like this in the summer. And because there are only two mouths to feed at home—Alex's & mine—I was looking for a way to get all the taste without so much cake.
A few days ago, I was really craving a date square but didn't want to be stuck with leftovers all week. I tried to concoct a single portion in less than 15 minutes and it worked (aside from the fact that I burned my first batch of crumble).
Enchiladas are a Mexican dish, consisting of a rolled, stuffed tortilla, slathered with spicy sauce and baked in the oven. It's a great comfort food, thankfully not too similar to typical Quebec dishes that we eat very (too) often.
