Made it with ground turkey instead of chicken. PALEO Jalapeño Chicken Burgers with Guacamole - Used 1 pound ground chicken and everything else (except used 1 whole jalapeño). Grilled on grill plate cuz super soft. Could even add more heat spice.
quinoa, fruit + nut bars: 1 cup quinoa flakes 1 cup almonds, whole ¼ cup dessicated coconut dried apple dried cranberries dried apricots ½ cup fruit juice ¼ cup mixed sunflower and pumpkin seeds (plus a little extra to garnish)
Lemongrass Coconut Noodles with Zucchini. We did a similar recipe tonight with shrimp sautéed with habaneros and pineapple - the sweet n' creamy coconut perfectly complimented the sweet n' spicy shrimp.
