All this needs is 5 minutes of prep, some time to soak in the flavors, and you just pop it all in the oven for easy meals all week long. . Here is how to make it: . 1.Start with 2.5 lbs boneless chicken thighs. Trim off any excess fat to the extent you’d like, completely optional. Add it to a large bowl. . 2.Let’s infuse the chicken with a ton of flavor - start by processing 1 medium yellow onion in a food processor. Add it to the chicken. . 3.Add the juice of 1 lemon, 2 heaping tbsp tomato paste, and 2 heaping tbsp greek yogurt. This will really help tenderize the chicken further and add great flavor. . 4.Lastly, the dry spices to bring everything together. Season with 3-4 pinches of salt, fresh cracked pepper, 1 tbsp thyme, 1 tbsp garlic powder, 1 tbsp urfa pepper (or Aleppo pepper or any other chili flakes). . 5. Mix it super well, and ideally let this marinate for 2-6 hours, but even better overnight, but if you want to make it right away, you can. . 6.When you’re ready to make it, preheat your oven to 425F. Remove chicken from the fridge and let it come up to room temp (about 30 mins) before popping in the oven. then pack the marinated chicken tightly into a bread loaf pan (about 8.5x4.5x2.5). Pop it into the oven for 50 mins at 425F. . 7.Remove the chicken from the oven, carefully tilt the pan onto a glass bowl or container to remove the excess juices. Pour the juices over the chicken, then tilt the pan again onto the glass bowl or container to remove the excess juices and set the juices aside. . 8.Flip the chicken onto a cutting board and cut into thin slices or strips. . 9.Serve it up however way you want - as is, on top of a salad, on a power bowl, whatever! This stays well in the fridge in an airtight lid for 4-5 days. . I made a delicious lowcarb high protein chicken bowl with my @kaizenfoodco lowcarb rice and it was SO Good. . Start by slicing your chicken breast lengthwise into cutlets. Place the chicken cutlets between two sheets of plastic wrap or wax paper and pound to an even quarter inch thickness. You can pound with a meat mallet, a rolling pin or a heavy saucepan. Cut those pieces in half so they're easier to work with. Now, set up your breading stations. In the first bowl, combine flour, garlic salt, paprika, and black pepper. In the second bowl, beat two large eggs and put breadcrumbs in the third bowl. Dread your chicken and flour tapping off the excess then dip it in egg wash. Finally, coat generously in bread crumbs. When you're done breading all of your chicken, set a large skillet over medium heat and add enough oil to coat the bottom. Fry for about three minutes per side or until golden brown and cook through. The secret is the marinate that will elevate the chicken and the quick scallion herb sauce is unbelievably good! I’m using bone-in skin-on chicken thighs to make the chicken more flavorful and juicy, but you can remove the skin if you prefer, too. I paired this with a simple salad, but it would be complete with some regular rice, quinoa, or if you’re doing lowcarb/keto, some of my lowcarb @kaizenfoodco rice. . This is how I made it (feel free to multiply for more) . 1.Grab 4 skin-on bone-in chicken thighs, dab them dry with a paper towel and add them to a bowl. . 2.For the marinade, grab a medium mixing bowl. Add 2 tbsp drizzle of olive oil, 2 tbsp tomato paste, 4 minced garlic cloves, the zest and juice of 1 large lemon, a couple generous pinches salt, pepper, 1 tbsp smoked paprika, 1 tbsp oregano or thyme, 1/4 to 1/2 tsp cayenne pepper. Mix it really well. . 3.Add the marinade to the chicken, and mix really well covering all sides. Let this ideally sit for 2 to 6 or ideally, overnight. . 4.Preheat oven to 410F. Remove chicken from fridge and let it come up to room temp before putting in the oven. . 5.Place chicken on a wire rack and put it in the oven at 410F for 35-40 mins. . 6.While thats going, make your sauce. I processed together 3 tablespoons of thick greek yogurt (or labneh), a handful of fresh mint (about 3 tablespoons), 2 scallions (green and white part), 1/2 large jalapeño, 1 tbsp olive oil, the juice of half a lemon, and a couple generous pinches of salt + pepper. Process well, taste, and adjust to your preference. . 7.Remove the chicken from the oven, plate it. Again, you can serve this with whatever base you like (it would be delicious with regular rice, quinoa, or if you’re lowcarb/keto my high protein kaizen rice), some salad of choice, and this sauce. .
