Shrimp Ceviche | MyRecipes.com  This is such a fabulous and easy recipe!  I did add extra lime juice, and used baby scallops for 1/2 of the seafood.   The recipe calls for you to boil the shrimp for 3 minutes, I boiled for 2 minutes. I boiled the baby scallops for one 1 minute. You do not want overcooked scallops, trust me, I have accidentally done it a few times :(  Enjoy!
