Avocado Chicken Salad: 2 or 3 boneless, skinless chicken breasts, 1 avocado chopped onion Juice of a lime 2 Tbsp cilantro salt and pepper to taste. Cook chicken breast until done, let cool, and then shred. Mix with all other ingredients.
Baked Turkey, Quinoa & Zucchini Meatballs Recipe in Lettuce Wraps by Cookin' Canuck by CookinCanuck - made these for dinner tonight; very light and healthy. I didn't try them with the lettuce wraps, but I think they would be perfect together.
Day 2-stir fried brown rice. Sautéed onions, garlic, ginger, add finely chopped kale, and leftover chicken, braggs soy seasoning, squeeze of lemon, salt and pepper. I think crushed almonds would be a nice addition too. So many veggie possibilities but I was too tired to prep more (:
