Ambrosia Salad - my changes: reduced fat sour cream, 2 cans crushed can chunks (both in juice, not syrup). Oranges (again in water, not syrup). Reduced calories to 175 per 1 cup serving! Next time I'll try to find unsweetened coconut flakes.
Pineapple up side down cup cakes. Try crushed pineapple at the bottom to really fill the cupcake bottom, unless you're using an oversized muffin pan, than you should be able to fit maybe a full pineapple ring inside.
