I subbed maple syrup for honey (didn't have any) and added some apple cider in the bottom to keep from burning since my loin was underweight. I did closer to 4 hrs, would cook less next time but it wasn't too dry thanks to the cider. Served with polenta and was a lovely dinner with leftovers.
