Apricot Light Fruitcake - This moist, spice-less fruitcake is one of our family favorites. It is not nearly as heavily flavored as dark fruitcake. Since no spices or molasses are used this cake relies purely on the flavor of the dried fruits.
Cherry Blossom Snowballs 3 cups rolled oats 2 cups unsweetened coconut ¾ cup cocoa cup walnuts Pinch of salt cups evaporated milk 1 tsp vanilla 2 cups sugar ¾ cup butter 34 maraschino cherries
Tweed Squares a. "Tweedies" - vanilla cake with flecks of grated chocolate baked in, topped with vanilla frosting and finished with a layer of chocolate. A Newfoundland favourite.
