That being said, after I created this super simple recipe, I found it to show up far more often – especially for lunches since this freezes SO well! I also love packing them for nights I golf after work – they’re super easy to eat on the run. I like to double the recipe and freeze the extras. It also goes great on top of greek salad, or a bed of rice!
