Vegan Cauliflower Cheddar Soup 1 tbsp oil 1/2 yellow onion 2 cloves garlic 1 head of cauliflower 2-3 medium potatoes 6 cups broth 1/2 cup nutritional yeast 1. In a large pot over heat add oil, onions, garlic sauté for 2-3 minutes stirring frequently 2. Add cauliflower & potatoes to pot & cook for another 5 minutes, stirring to avoid sticking 3. Add broth & nutritional yeast to pot & simmer on low for 15 minutes until potatoes & cauliflower is fork tender 4. Puree soup with an immersion blender
