Prepping ahead Southwest Chicken Salad for lunches.  6 servings: 18 oz chopped cooked chicken 1 cup shredded cheddar jack 1 cup diced yellow pepper  1/2 cup diced green onion 1/2 cup diced cilantro 2 oz Light Mayo 4 oz Greek Yogurt  2 oz Salsa 1 tsp cumin  Makes 6 6 oz servings. Dinner last night was a meal the whole family could eat. I put a beef roast in the instant pot with green chilies and garlic. Then we shredded it into tacos. They had whole wheat tortillas with sour cream and piles of cheese. I had an Ole low carb tortilla with piles of veggies and a pinch of cheese.
