It's been a while since I last posted even though there were so many ideas swirling in my mind. For one weird reason, I feel so afrai.

SEAFOOD, LEMON & BASIL LINGUINI: Serves 4. Marinate 400g cooked seafood in lemon zest & juice, 1 clove garlic, crushed & 30g fresh basil (shredded) for 5 mins. Cook 300g linguini in boiling water for 10 mins until tender, drain & return to the pan. Meanwhile, heat 1 tbsp olive oil in a frying pan & fry one chopped onion for 3-4 minutes, add the seafood with the marinade & cook for 2-3 minutes. Toss into the pasta, season to taste and serve.
