Vegan butternut minestrone is a cozy Fall spin on a classic soup. It's filled out with chickpeas, chard, hearty herbs, and whole grain pasta (we used chickpea pasta to keep this recipe gluten-free).

just made this and added diced red potatoes, white kidney beans and steamed lentils instead of garbanzo beans and used chicken stock instead of veggie stock. Broke up some lasagna noodles and DONE!  *Always save your Parm Reg rind and throw it in the pot while it cooks. Mmm!
