All it takes is a little bit of prep, a quick marinade, and about 13 minutes of cooking — which means it’ll probably be on your table faster than you can get to the restaurant and back! Cook fettuccine. Before draining, pour 2c into blender & set aside. Then heat oil in med. pan over med. heat; saute cauliflower & garlic & cover 12-15min. or till soft. Add to water w/nutmeg, salt & pepper. Blend till smooth, + water if needed. Put back in pan on med-low w/almond milk; stir freq. @5-7min. till thick. Add fettuccine; mix well. Top with cheese & parsley.
