Tempeh - incubated at around 95-98 degrees F. In my oven with the pilot light on for 24 hours. Cracked it open in the last 12 hours. I used two cultures for health packets for 2 cups dried adzuki beans. Maybe could have let it go a little longer.  For next time: try cracking beans apart before soaking.
