Shrimp Cucumber Salad in a Mason Jar. Cut up shrimp, cucumber, tomato, red onion and put in a Mason jar with some vinegar so they marinate a bit. Then chop up the lettuce, shrimp and feta and serve. Only 220 calories.
~Salad in a Jar~ these salads can be made up to 4 days in advance and will stay fresh in the fridge with a lid on. This is one of my tricks to eating salad everyday for lunch. I make a few jars on Sunday night. When you’re ready to eat, just shake it up.
