We're still unpacking from vacation so I thought I would post a mix leftover from the Mix It Up party that I haven't used yet.

Roasted Sweet Potatoes.  This food is low in Sodium, and very low in Saturated Fat and Cholesterol. It is also a good source of Dietary Fiber, Vitamin B6 and Potassium, and a very good source of Vitamin A, Vitamin C and Manganese.

This is a great vegetable to accompany almost any meal and a great company dish. Does not taste like traditional sweet potatoes. I got this recipe from Healthy Choices cookbook and I tweaked it a bit.
