Tipicular Fixin's Whisky Sour Soup with Sausage, Kale and Potato 3 medium links Italian Sausage 1 lg onion, chopped 2 lg cloves garlic 1 tsp chili flake* 1 tsp fennel seed* 3 medium potatoes, cubed 1 bunch kale, chopped 1 Whisky sour (recipe below) 8 C chicken stock, no salt S&P to taste *optional
Tipicular Fixin's: MXMO ~ SHIMS Escarpment Spritzer 2 oz fresh pear puree* 2 oz Cave Spring Riesling 1/4 oz Brandy 1/4 oz Creme de Violette 3 oz sparkling water (soda water) *2 whole ripe pears 1 oz fresh lemon juice Method Chop pear (skin on) and place in blender or food processor with lemon juice. Blend until smooth then strain. Fill a large wine glass with ice, pour ingredients over ice, saving the soda for last, stir briefly. Garnish with fresh pear and a straw.

Hibiscus syrup for cocktails or iced tea 2 C water 1 C dried sorrel sepals 1 1/2 tbsp clove, whole 2 inches fresh ginger 1 orange, zest only 1 cinnamon stick 1 1/2 C sugar Method Boil water. Remove from heat, add ingredients excepting sugar. Steep for several hours. Strain tea through fine mesh or cheesecloth, discard solids (optional, retain some of the sepals for garnish). Return remaining liquid to pan. Add sugar. Heat over medium, stirring frequently until sugar dissolves. Allow to cool.
Tipicular Fixin's: SORREL Rum Sorrel 1 1/2 oz white rum 1 oz sorrel syrup* 1/2 oz fresh lemon juice 2-3 drops Angostura bitters Method In a shaker add all ingredients, fill 3/4 with ice. Shake vigorously for 20- 30 seconds, strain into old fashioned glass filled with cracked ice. Garnish with lemon zest and/or sorrel.
West Coast 75 1 oz Victoria Gin 1/2 oz fresh lemon juice 1/2 oz simple syrup (1 pt water 1 pt sugar) 3 oz sparking wine 1 drop orange bitters (twisted and bitter) Method In a shaker add gin, lemon and syrup, fill 3/4 with ice.
