Wild Sockeye Salmon Tacos • Zimmy’s Nook
These are the best tacos I’ve had in a very long time (maybe ever!) It’s all about the quality of the ingredients! Pico de Gallo made with tomatoes, jalapeños & cilantro from the garden, red onions & garlic from the farmers’ market. Guacamole with the same jalapeños, cilantro, white onions & garlic. Corn & cabbage from a local farm. Blackened wild sockeye salmon. Delicious corn tortillas. All served with spicy margaritas (garden jalapeños!) So darn tasty! I love this time of year!
One of my favourite salmon meals. Cedar planked salmon with a Maple-Habanero Mustard glaze. Fresh ginger, pearl red onions, dill, maple syrup, butter, lemon zest and habanero mustard were blitzed together in the mini food processor, then heated and brushed over the salmon on the cedar plank.

Fish & chips for dinner tonight. Grilled a couple of wild red snapper with lime, olive oil, s&p and herbs, then served them with an olive, caper, tomato, herb and feta salsa, over crispy baked potatoes. A nice fresh summery meal! Hope y’all had a great day! .

Large wild caught Argentinian shrimp, sautéed shell on, in olive oil, peperoncini piccanti, garlic, white wine and lemon juice. So good just like this, but Elaine was in the mood for pasta, so I made some penne and mixed it all together with pasta water, olive oil, s&p, lemon juice, more peperoncini piccanti, green onions and olives. #HestanCulinary #HestanNanoBond

A skillet of honey-harissa-garlic-lime-cilantro shrimp is the perfect midweek meal! I enjoyed lettuce wraps with rice, carrots, celery, jalapeños, cilantro & shrimp, while my wife had a salad topped with shrimp (no rice). I’m not a big fan of deep fried foods, so when I came across this beautiful wild caught Halibut at the the wheels started spinning to come up with a meal that eats like an order of #fishandchips wrapped in newspaper... but without all the batter & grease. The fish was baked with lemon, olives, capers, chili olive oil and rosemary, while the sweet potatoes were baked with the 3 P’s (parmesan, pepper & paprika).
Grilled skewers 2 ways: 1) Salmon skewers, with lemons & tomatoes, tossed in a salsa verde 2) Chicken and multi coloured peppers in a souvlaki marinade Tasty end to the week! Have a great weekend my friends!

Grilled salmon steaks with a grilled peach, grilled grape and berry salad. The salad was finished with goat cheese and fresh mint. The marinade for the salmon was nice combination of soy sauce, sesame oil, honey, maple syrup, Dijon, garlic, shallots, lemon juice & zest... my wife told me to write down what I did because she really liked it... guess I’d better do that before I forget! 😂
