My lovely wife requested pasta tonight... so, I made her a summer garden pasta. Linguine with cherry tomatoes, basil, garlic, evoo, pepper flakes and a 'healthy' amount of parmigiano reggiano. My son loved it too! #HappyWifeHappyLife @zimmysnook
#MeatlessMonday Magic! The penne mezzi was cooked in strained tomatoes, basil, garlic, shallots, spices and red pepper flakes. The tomatoes were roasted in olive oil, garlic and red pepper flakes. My take on the age old Italian comfort food... meatballs 'n sauce. Beef and pork mixed with ricotta, eggs, crumbs, fresh parsley, oregano, salt and chilli flakes. The sauce was diced tomatoes, strained tomatoes, onions, garlic and spices. The two met and lived happily ever after... in my tummy! @zimmysnook
Tonight's #MeatlessMonday meal was baked spinach and ricotta stuffed conchiglioni. A jar of strained tomatoes, simmered with onions, garlic, hot peppers, basil and spices was the base. Tossed in some sauteed mushrooms, the stuffed pasta, sprinkled with Parmesan and voilà.@zimmysnook
Today's lunch was Nero di Seppia spaghetti Carbonara. Cuttlefish fish ink pasta tossed with egg, parmigiano, bacon, garlic and topped with a poached egg (and some tomatoes just to brighten it up a little). Enjoy your day!
